If the chicken is frozen and you are planning to prepare and serve this recipe THE DAY AFTER DELIVERY, then place the package of chicken in the refrigerator to defrost overnight and through the next day.

Preparing meal the day of delivery

If the chicken is frozen and you are planning to prepare and serve this recipe THE DAY OF DELIVERY remove the chicken from the refrigerator two hours before serving. Remove and set aside white butcher paper surrounding the cryovac packaging. Do not remove the chicken from this packaging. With the poultry still inside the plastic packaging place it into a bowl in the sink. Run cold water into the bowl, covering chicken and let sit for 10 minutes. Refill with fresh cold water. Repeat 3 times, every 10 minutes or until the chicken is soft and ready to cook,

Halladay Barn’s Garlic Tomato Basil Seasoning


To begin seasoning the poultry, unwrap the chicken in the white butcher paper. Lay the paper flat on the counter with the shiny side up to dredge the chicken in the seasonings.

Mince peeled garlic clove with a fork or by crushing it with the side of a chef’s knife. Then continue alternately chopping and crushing to get a fine meal. Combine 2 tablespoons of Ariston’s Extra Virgin Olive Oil,1 teaspoon of the Garlic Tomato Basil seasoning or more depending on taste, minced garlic, and a scant teaspoon of salt onto paper.

Open the cryovac poultry packaging, slip out the chicken and pat it dry. Place chicken in the seasoning turning to cover both sides and under the skin. Then wrap the chicken back in the butcher paper and place it in the refrigerator to marinate for an hour or longer.

One hour before dinner, take the chicken from the fridge and allow it to come to room temperature. Then place one shelf in the middle of the oven for even cooking and set temperature to 375°F to pre-heat. Place chicken skin up, in a well oiled oven proof pan and bake for 35 minutes or until an instant-read thermometer inserted into the thickest part near a bone reads 165° F. To brown and crisp the skin, turn off the oven and broil the chicken for 2 minutes. Remove chicken from the oven, place under foil tent and allow to rest for 3 minutes before serving.

Chef’s Tips:

This recipe is for one, but scaling up recipes is easy since dinner baskets come with the right amount of ingredients for the number of guests you are serving.

Use the white butcher paper shiny side up for meat preparation and the checker board paper to prep ingredients for side dishes.

Vegetable Side Dish 3/4 c. per person



Green Peppers

Yee Yee’s Marinara Sauce


Rinse the tomatoes and green peppers under cool water and pat dry. Wipe mushrooms clean and peel the onion.

Cut vegetables into bite size pieces. Mince peeled garlic clove with a fork or by crushing it with the side of a chef’s knife. Then continue alternately chopping and crushing to get a fine meal.

Place vegetables in a sauté skillet. Add a pinch of salt and 2 tablespoons of oil. Sauté over medium heat on the stove.

Stir occasionally until tomatoes are soft and skins have burst and onions are translucent about 10 to 12 minutes. Turn heat to low and add Yee Yee’s Marinara Sauce. Heat by simmering.

Pasta Side Dish 1 cup per person


Grand Isle Garlic Scape Pasta

Kosher Salt


Heat a large stock pot with water and a teaspoon of salt over the stove. When the water comes to a boil, pour pasta into the pot. Figure one cup of dry pasta per person. Allow the water to boil again and continue cooking for 7 – 8 minutes for al dente. Drain.

Place in serving dish and top with vegetables and marinara sauce.
